Ingredients

  • Spring roll wrappers
  • Vegetables (like cabbage, carrots, and bell peppers)
  • Protein (like shrimp, chicken, or tofu)
  • Salt
  • Pepper
  • Oil for frying
  • Sweet chili sauce

Instructions

  1. Prepare the filling by mixing together the chopped vegetables and protein in a bowl. Season this mix with salt and pepper to taste.
  2. Place a spring roll wrapper on a flat surface and spoon a generous amount of your filling onto the center. Roll it up tightly, folding in the sides as you go. Use a bit of water to seal the edges.
  3. Heat oil in a frying pan over medium heat, ensuring enough oil to submerge at least half of the spring rolls.
  4. Once the oil is hot, carefully add the spring rolls to the pan and fry until golden brown and crispy on all sides.
  5. Remove the spring rolls with a slotted spoon and drain on paper towels.
  6. Serve your crispy fried spring rolls with sweet chili sauce for dipping.

Notes

For longer storage, freeze un-fried spring rolls for up to 2-3 months. Fry them straight from the freezer.
