Description

A vibrant and refreshing Lebanese salad featuring crisp vegetables, toasted pita chips, and a tangy sumac dressing.


Ingredients

  • 2 low-carb pita bread
  • 4 cups mixed greens (lettuce, arugula, etc.)
  • 2 tomatoes, chopped
  • 1 cucumber, diced
  • 4 radishes, thinly sliced
  • 3 green onions, chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup mint, chopped
  • 2 tablespoons ground sumac
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Start by cutting the low-carb pita bread into triangles. Place them on a baking sheet and toast until crispy.
  2. Preheat the oven to around 375°F (190°C) to get them nice and crunchy.
  3. In a large bowl, combine the mixed greens, chopped tomatoes, diced cucumber, thinly sliced radishes, chopped green onions, and diced parsley and mint.
  4. Whisk together the olive oil, lemon juice, ground sumac, salt, and pepper in a small bowl.
  5. Drizzle the dressing over the salad and toss gently to coat everything evenly.
  6. Add the toasted pita chips on top and serve immediately.

Notes

Ensure to add pita chips just before serving to maintain their crunch.
