- 2 low-carb pita bread
- 4 cups mixed greens (lettuce, arugula, etc.)
- 2 tomatoes, chopped
- 1 cucumber, diced
- 4 radishes, thinly sliced
- 3 green onions, chopped
- 1/4 cup parsley, chopped
- 1/4 cup mint, chopped
- 2 tablespoons ground sumac
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt, to taste
- Pepper, to taste
Instructions
- Start by cutting the low-carb pita bread into triangles. Place them on a baking sheet and toast until crispy.
- Preheat the oven to around 375°F (190°C) to get them nice and crunchy.
- In a large bowl, combine the mixed greens, chopped tomatoes, diced cucumber, thinly sliced radishes, chopped green onions, and diced parsley and mint.
- Whisk together the olive oil, lemon juice, ground sumac, salt, and pepper in a small bowl.
- Drizzle the dressing over the salad and toss gently to coat everything evenly.
- Add the toasted pita chips on top and serve immediately.
Notes
Ensure to add pita chips just before serving to maintain their crunch.
