Easy Ranch Roasted Carrots

Description

A simple yet delicious side dish featuring roasted carrots with zesty ranch seasoning.


Ingredients

  • 1.5 lbs whole carrots, peeled and sliced into 1/41/2 inch thick slices
  • 2 tablespoons olive oil or avocado oil
  • 34 tablespoons store-bought ranch seasoning

Instructions

  1. Preheat the oven to 425° F. Spray a baking sheet with cooking spray or line it with parchment paper.
  2. Place the sliced carrots into a mixing bowl and drizzle them with 2 tablespoons of olive oil. Lightly toss to coat all of the carrots in the oil.
  3. Sprinkle 3 tablespoons of ranch seasoning onto the carrots and toss to ensure they are evenly coated.
  4. Lay the seasoned carrots in a single layer on the baking sheet. If they don’t all fit, roast them in batches or use another baking sheet.
  5. Bake for 25 minutes until the carrots start turning golden brown with slightly crispy edges.
  6. Remove the carrots from the oven and sprinkle on the remaining 1 tablespoon of ranch seasoning and a pinch of black pepper. Toss lightly to mix.
  7. Serve warm and enjoy!

Notes

These carrots make an excellent side dish for virtually any meal. Pair them with roasted chicken or grilled steak.
