- 1 lb Shrimp
- 12 oz Fettuccine
- ½ cup Parmesan cheese
- ¼ cup Lemon juice
- 1 Lemon (sliced)
- 4 tablespoon Butter
- 2 tablespoons Cooking Oil
- 1 teaspoon Minced garlic
- ½ teaspoon Lemon Zest
- Salt (to taste)
- Black Pepper (to taste)
Instructions
- In a large pot of boiling salted water, cook the fettuccine pasta until al dente, about 8-10 minutes. Drain and set aside.
- While the pasta cooks, heat the cooking oil in a pan over medium heat.
- Add the minced garlic to the oil and cook for about 2 minutes until fragrant, being careful not to burn it.
- Melt the butter in the same pan with the garlic, then add the shrimp. Cook, stirring occasionally, until they turn opaque with some pink color, about 4-6 minutes.
- Pour in the lemon juice and sprinkle in the lemon zest, along with the Parmesan cheese, salt, and black pepper. Stir together until well combined.
- Add the cooked fettuccine to the pan and stir until the pasta is evenly coated in the garlic butter sauce.
- Garnish with parsley before serving.
