- 8 ounces of pasta (fettuccine or penne)
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into chunks
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup Parmesan cheese, grated
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the pasta: Start by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta and set aside.
- Sauté the chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, seasoning them with salt and pepper. Cook until the chicken is golden brown and fully cooked, about 7-10 minutes.
- Add garlic: Once the chicken is cooked, add the minced garlic to the skillet. Sauté for about 1 minute, letting the garlic become fragrant but be careful not to burn it.
- Make the sauce: Pour in the heavy cream and chicken broth, stirring until well combined. Bring the mixture to a simmer, letting it cook for about 3-4 minutes to thicken slightly.
- Incorporate cheese: Gradually add the grated Parmesan cheese to the sauce, stirring continuously until the cheese melts and the sauce becomes creamy. Taste and adjust seasoning with salt and pepper as needed.
- Combine: Finally, add the cooked pasta to the skillet. Toss everything together until the pasta is well coated in the creamy sauce.
- Serve and garnish: Remove from heat and garnish with fresh parsley for a pop of color (and flavor!) if desired.
Notes
Serve with a simple green salad and garlic bread. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months.
