Instructions
- Combine the cucumber, mint leaves, lime juice, and honey (or sugar) in a blender. Blend until smooth.
- Strain the mixture into a pitcher using a fine mesh sieve.
- Add the 2 cups of water to the cucumber-mint juice and stir well.
- Serve over ice and garnish with additional mint leaves if desired.
