Description

Ingredients

  • 2 lbs (900g) Russet or Yukon Gold potatoes
  • 3 tbsp high-heat oil (avocado, canola, or vegetable)
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 3 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • ½ cup (50g) finely grated Parmesan cheese
  • 2 tbsp fresh parsley (chopped)

Instructions

  1. Start by scrubbing the potatoes to clean them well. You can choose to leave the skins on for an extra crunch or peel them if you prefer a classic fry.
  2. Place the cut potatoes in a large bowl of cold water and add a big pinch of salt. Soak for 30 minutes.
  3. After soaking, drain and rinse the potatoes thoroughly to remove any excess salt. Dry them completely with a kitchen towel.
  4. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  5. Toss the dried potatoes with oil, salt, and pepper until evenly coated.
  6. Spread the fries in a single layer on the prepared baking sheet.
  7. Bake for 15 minutes, then carefully flip each fry to ensure they roast evenly.
  8. Bake for another 15-20 minutes until the fries are deeply golden brown and crispy.
  9. While the fries bake, melt butter in a small saucepan over medium-low heat. Add the minced garlic and cook for just 60 seconds until fragrant.
  10. As soon as the fries come out of the oven, transfer them to a big bowl.
  11. Pour the garlic butter over the fries and toss well to coat.
  12. Add the grated Parmesan cheese and chopped parsley. Toss again until every fry is coated.
  13. Serve immediately while hot and crispy for the best experience!
