  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

A comforting and creamy casserole loaded with colorful winter vegetables, perfect for family gatherings or cozy nights in.

Ingredients

Scale
  • 1 head cauliflower, chopped
  • 1 bunch broccoli, chopped
  • 2 cups carrots, sliced
  • 2 cups shredded cheese (such as cheddar or a blend)
  • 2 cups milk
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Breadcrumbs (optional, for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, steam the cauliflower, broccoli, and carrots until just tender, about 5-7 minutes.
  3. In a separate saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute to make a roux.
  4. Gradually whisk in the milk, bringing the mixture to a simmer, and cook until thickened.
  5. Stir in the shredded cheese until melted and smooth.
  6. Combine the steamed vegetables with the cheese sauce, adding salt and pepper to taste.
  7. Pour the mixture into a baking dish, and if desired, sprinkle with breadcrumbs.
  8. Bake for 25-30 minutes or until bubbling and golden.
  9. Serve hot and enjoy!

Notes

For a protein boost, consider adding cooked chicken or beans. Use freshly shredded cheese for the best texture.
