  • 1 cup heavy cream or milk
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Fresh herbs (like parsley or thyme) for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery. Sauté these until the vegetables soften, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Pour in the vegetable broth and bring the mixture to a boil.
  4. Reduce the heat and add the assorted chopped vegetables. Let it simmer until all the veggies are tender, about 10-15 minutes.
  5. Stir in the heavy cream and shredded cheese. Cook until the cheese melts and the soup becomes creamy.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh herbs before serving.
