- 4 cups vegetable broth
- 2 cups assorted vegetables (such as zucchini, broccoli, and bell peppers), chopped
- 1 cup heavy cream or milk
- 1 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- Fresh herbs (like parsley or thyme) for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery. Sauté these until the vegetables soften, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce the heat and add the assorted chopped vegetables. Let it simmer until all the veggies are tender, about 10-15 minutes.
- Stir in the heavy cream and shredded cheese. Cook until the cheese melts and the soup becomes creamy.
- Season with salt and pepper to taste.
- Garnish with fresh herbs before serving.
