- 1 cup orzo pasta
- 2 cups butternut squash, diced
- 2 cups fresh spinach
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and golden brown.
- In a pot, bring vegetable broth to a boil, then add the orzo and cook according to package instructions, about 9-11 minutes, until al dente.
- Heat a tablespoon of olive oil in a pan. Sauté minced garlic until fragrant, then add the fresh spinach and cook until wilted.
- Drain the orzo and add it to the pan with the sautéed spinach and garlic. Mix everything well.
- Stir in the roasted butternut squash and heavy cream. Blend until well combined, then season with salt and pepper.
- Serve hot, topped with Parmesan cheese if desired.
Notes
For an extra flavor boost, serve with crusty bread or a light side salad dressed with lemon vinaigrette.
