  • 2 cups butternut squash, diced
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and golden brown.
  3. In a pot, bring vegetable broth to a boil, then add the orzo and cook according to package instructions, about 9-11 minutes, until al dente.
  4. Heat a tablespoon of olive oil in a pan. Sauté minced garlic until fragrant, then add the fresh spinach and cook until wilted.
  5. Drain the orzo and add it to the pan with the sautéed spinach and garlic. Mix everything well.
  6. Stir in the roasted butternut squash and heavy cream. Blend until well combined, then season with salt and pepper.
  7. Serve hot, topped with Parmesan cheese if desired.
