- 6 oz andouille sausage or smoked sausage (thinly sliced)
- Fettuccine pasta
- Garlic
- Crushed tomatoes
- Chicken broth (sodium free)
- Heavy cream
- Parmesan cheese
Instructions
- Start by cooking the fettuccine pasta according to the package instructions. This usually takes about 8-10 minutes.
- While the pasta cooks, grab a large skillet and heat the olive oil over medium heat. Once hot, add the sliced sausage and cook until it’s nice and browned, which should take about 4-5 minutes.
- Stir in the minced garlic and add the shrimp to the skillet. Season everything generously with Cajun seasoning and oregano. Cook until the shrimp are opaque and pink, about 3-4 minutes.
- Next, pour in the crushed tomatoes and chicken broth. Allow everything to simmer for a few minutes, letting the flavors meld together.
- Lower the heat slightly and stir in the heavy cream and Parmesan cheese. Mix until everything is well combined and creamy.
- Drain the cooked fettuccine and toss it into the sauce, mixing until the pasta is fully coated.
- Serve hot, garnished with extra Parmesan or fresh herbs if you’d like, and dig in!
