Description

Delicious, fluffy cupcakes reminiscent of the famous Magnolia Bakery, perfect for any occasion.


Ingredients

  • 1 1/2 cups cake flour (170 gm)
  • 3/4 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup whole milk (125 ml)
  • 1/4 cup sour cream (61.3 gm)
  • 1/2 cup unsalted butter (115 gm)
  • 3/4 cups granulated sugar (150 gm)
  • 1 teaspoon vanilla extract (5 ml)
  • 2 egg whites
  • 1/2 cup unsalted butter, room temperature (115 gm)
  • 1 teaspoon vanilla extract (5 ml)
  • 2 cups powdered sugar (224 gm)
  • 3 tablespoons whole milk (45 ml)
  • 1 drop red gel food coloring

Instructions

  1. Preheat your oven to 325°F (163°C). Line a 12-cup muffin tin with cupcake liners and set it aside.
  2. Whisk together the cake flour, baking powder, baking soda, and salt in a medium bowl.
  3. Combine the whole milk, sour cream, and vanilla extract in a separate small bowl.
  4. Cream the softened butter and sugar together on medium speed until light and fluffy, about 3-4 minutes.
  5. Mix in the egg whites until fully incorporated.
  6. Add half of the wet ingredients, followed by half of the dry ingredients. Mix until everything is incorporated.
  7. Repeat with the second half of the wet and dry mixtures until the batter is silky.
  8. Scoop the batter into the prepared cupcake liners, filling them about 3/4 of the way full.
  9. Bake for 20-22 minutes, or until the tops spring back when touched.
  10. Remove from the oven and let cool completely on a cooling rack.
  11. Combine the butter and powdered sugar in a bowl and beat until crumbly.
  12. Add in the whole milk and the second teaspoon of vanilla extract, mixing until smooth.
  13. Mix in a drop of red gel food coloring until your desired shade is achieved.
  14. Fill a piping bag with icing and frost the cooled cupcakes in a circular motion.
