- 12 pieces Potstickers (homemade or frozen)
- 4 cups Chicken or Vegetable Broth
- 1 tablespoon Fresh Ginger (minced)
- 3 cloves Garlic (minced)
- 1 can Coconut Milk
- 2 tablespoons Soy Sauce
- 2 tablespoons Fresh Lime Juice
- 1/4 cup Cilantro (chopped)
- 1/4 cup Green Onions (sliced)
Instructions
- Start by heating a large pot over medium heat. Add a splash of oil if you like, for extra flavor.
- Toss in the minced ginger and garlic. Sauté them for about 1 minute until they become fragrant.
- Pour in the chicken or vegetable broth. Bring it to a gentle boil.
- Once it’s boiling, gently add your potstickers.
- After the potstickers have cooked for about 5 minutes, reduce the heat to low.
- Stir in the coconut milk, soy sauce, and lime juice. Mix well, and let it simmer for another 5 to 10 minutes.
- When you’re ready to serve, ladle the soup into bowls and garnish with freshly chopped cilantro and sliced green onions.
Notes
For a vegetarian version, use vegetable potstickers and vegetable broth.
