Instructions
- In a large pot, combine the rice, coconut milk, water, sugar, and salt.
- Bring the mixture to a boil over medium heat, then reduce it to a simmer.
- Cook uncovered, stirring occasionally, until the rice is tender and the mixture is creamy, about 20-25 minutes.
- Stir in the vanilla extract and shredded coconut (if using).
- Remove from heat and let it sit for a few minutes to thicken.
- Serve warm or chilled, topped with fresh fruit or nuts if desired.
Notes
Use short-grain rice for the best creaminess. Feel free to adjust sweetness and toppings as desired.
