Ingredients

- 1 lb chicken breast
- 4 cups vegetable or chicken broth
- 2 cups kale, chopped
- 1 cup mushrooms, sliced
- 1 cup celery, chopped
- 1 cup carrots, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- Heat a drizzle of olive oil in a large pot over medium heat. Add the diced onions and minced garlic, sautéing until they turn translucent and aromatic.
- Toss in the chicken breast and cook until browned on all sides.
- Pour in the broth and bring to a gentle boil.
- Add the chopped celery, carrots, and sliced mushrooms. Reduce heat and let simmer for about 10 minutes.
- Toss in the chopped kale and season with salt and pepper to taste.
- Cook for an additional 5-10 minutes or until all vegetables are tender.
- Remove the chicken breast, shred it, and return it to the soup.
- Serve warm and enjoy!
