Ingredients

  • 1 lb chicken breast
  • 4 cups vegetable or chicken broth
  • 2 cups kale, chopped
  • 1 cup mushrooms, sliced
  • 1 cup celery, chopped
  • 1 cup carrots, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat. Add the diced onions and minced garlic, sautéing until they turn translucent and aromatic.
  2. Toss in the chicken breast and cook until browned on all sides.
  3. Pour in the broth and bring to a gentle boil.
  4. Add the chopped celery, carrots, and sliced mushrooms. Reduce heat and let simmer for about 10 minutes.
  5. Toss in the chopped kale and season with salt and pepper to taste.
  6. Cook for an additional 5-10 minutes or until all vegetables are tender.
  7. Remove the chicken breast, shred it, and return it to the soup.
  8. Serve warm and enjoy!
