Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 4 cups chicken broth
- 1 cup cooked chicken, shredded
- 2 cups egg noodles
- 2 cups spinach or other greens
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Pour in the chicken broth and bring it to a boil.
- Add the shredded chicken and noodles to the boiling broth, then reduce the heat to a simmer. Cook according to the noodle package instructions until the noodles are tender, usually around 6-8 minutes.
- Stir in the spinach and cook until it wilts.
- Season with salt and pepper to your taste. Serve hot, garnished with chopped green onions.

For a vegetarian option, substitute chicken with tofu and use vegetable broth.
