  • 4 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 2 cups egg noodles
  • 2 cups spinach or other greens
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  3. Pour in the chicken broth and bring it to a boil.
  4. Add the shredded chicken and noodles to the boiling broth, then reduce the heat to a simmer. Cook according to the noodle package instructions until the noodles are tender, usually around 6-8 minutes.
  5. Stir in the spinach and cook until it wilts.
  6. Season with salt and pepper to your taste. Serve hot, garnished with chopped green onions.
