- 1 large eggplant, diced
- 2 medium zucchinis, sliced
- 1 bell pepper, diced
- 2 cups tomatoes, chopped
- 1 onion, diced
- 3 cloves garlic, minced

- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and minced garlic, and sauté until they become translucent.
- Toss in the diced eggplant and cook for about 5 minutes until it begins to soften.
- Next, stir in the sliced zucchini and diced bell pepper, cooking for another 5 minutes until the vegetables are tender.
- Add the chopped tomatoes, dried thyme, dried basil, salt, and pepper to the skillet.
- Reduce the heat to low, cover the skillet, and let the mixture simmer for about 20 minutes, stirring occasionally.
- Once the vegetables become tender, and the flavors meld beautifully, remove the skillet from heat.
- Serve warm, garnished with fresh basil for an aromatic finish.
