Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2 cups fresh strawberries, halved
  • 1 cup chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Combine the graham cracker crumbs, 1/4 cup sugar, and melted butter in a mixing bowl. Press this mixture into the bottom of a 9-inch springform pan to create your crust.
  3. Beat together softened cream cheese, 1 cup sugar, and vanilla extract until smooth.
  4. Add the eggs one at a time, mixing well after each addition. Pour the cheesecake mixture over the crust in the springform pan.
  5. Bake for about 50-60 minutes, or until the center is set.
  6. Let the cheesecake cool down before refrigerating it for at least 4 hours to set.
  7. Melt chocolate chips with vegetable oil in a microwave-safe bowl. Dip the halved strawberries in the chocolate and arrange them on top of the chilled cheesecake.
  8. Slice, serve, and enjoy!
