Instructions
- Preheat your oven: Set your oven to 350°F (175°C), and line a cupcake pan with liners.
- Mix the dry ingredients: In a large bowl, combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Prepare the wet ingredients: In another bowl, whisk the melted butter, eggs, vanilla extract, and cooled coffee together.
- Combine wet and dry: Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fill the liners: Spoon the batter into the cupcake liners, filling them about two-thirds full.
- Bake: Place the cupcake pan in the oven and bake for 18-20 minutes.
- Cool completely: Once baked, transfer the cupcakes to a cooling rack.
- Make the frosting: Whip together the heavy cream, powdered sugar, and instant coffee granules until soft peaks form.
- Frost and enjoy: Generously frost your cooled cupcakes.
