Description

Ingredients

  • 1 cup quinoa, rinsed
  • 1 lb chicken breast, diced
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onions, sliced carrots, and sliced celery; sauté until they soften, about 5-7 minutes.
  3. Stir in the minced garlic and diced chicken. Cook until the chicken turns golden brown, around 5 minutes.
  4. Add the rinsed quinoa, chicken broth, thyme, and a sprinkle of salt and pepper. Mix everything together well.
  5. Bring the mixture to a boil. Once it bubbles, reduce the heat to simmer. Cover and cook for 20-25 minutes until quinoa is fluffy and chicken is tender.
  6. Serve it warm and enjoy!

Notes

Rinse quinoa before use to remove the bitter coating. Adjust seasoning to taste, and feel free to add vegetables you have on hand.
