Ingredients

- 1 cup quinoa, rinsed
- 1 lb chicken breast, diced
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onions, sliced carrots, and sliced celery; sauté until they soften, about 5-7 minutes.
- Stir in the minced garlic and diced chicken. Cook until the chicken turns golden brown, around 5 minutes.
- Add the rinsed quinoa, chicken broth, thyme, and a sprinkle of salt and pepper. Mix everything together well.
- Bring the mixture to a boil. Once it bubbles, reduce the heat to simmer. Cover and cook for 20-25 minutes until quinoa is fluffy and chicken is tender.
- Serve it warm and enjoy!
Notes
Rinse quinoa before use to remove the bitter coating. Adjust seasoning to taste, and feel free to add vegetables you have on hand.
