Chicken Kabsa

Description

A flavorful and aromatic dish combining tender chicken, fragrant rice, and a medley of spices, perfect for family gatherings.


Ingredients

  • 1 whole chicken
  • 2 cups long-grain rice
  • 2 onions, chopped
  • 2 tomatoes, puréed
  • 2 teaspoons tomato paste
  • 1 spicy chili, chopped
  • 2 bay leaves
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 stick cinnamon
  • 1 teaspoon curry powder
  • 3 cups water
  • Olive oil
  • Raisins
  • Lemon, sliced
  • 2 teaspoons salt

Instructions

  1. Soak the rice in water for 25 minutes, then rinse and drain.
  2. Heat olive oil in a large pot over medium heat.
  3. Add the chopped onions and sauté until softened.
  4. Toss in the cinnamon, bay leaves, black pepper, and a pinch of salt.
  5. Add the chicken pieces and brown slightly on all sides.
  6. Blend the tomatoes into a purée and stir into the pot along with the tomato paste.
  7. Chop the chili and add it with cumin, then pour in half a liter of hot water and cover.
  8. Simmer for about an hour.
  9. Remove the chicken and let it rest, optionally grill for crispy skin.
  10. Add the rinsed rice with curry powder to the pot and mix.
  11. Pour water over the rice until just covered, bring to a boil for 10 minutes.
  12. Reduce heat and cook for another 10 minutes until water is absorbed.
  13. Serve the rice topped with chicken and garnish with raisins and lemon slices.

Notes

For serving, add a side salad or pita bread. Garnish with toasted nuts for extra crunch.
