A flavorful and aromatic dish combining tender chicken, fragrant rice, and a medley of spices, perfect for family gatherings.

- 1 whole chicken
- 2 cups long-grain rice
- 2 onions, chopped
- 2 tomatoes, puréed
- 2 teaspoons tomato paste
- 1 spicy chili, chopped
- 2 bay leaves
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 stick cinnamon
- 1 teaspoon curry powder
- 3 cups water
- Olive oil
- Raisins
- Lemon, sliced
- 2 teaspoons salt
Instructions
- Soak the rice in water for 25 minutes, then rinse and drain.
- Heat olive oil in a large pot over medium heat.
- Add the chopped onions and sauté until softened.
- Toss in the cinnamon, bay leaves, black pepper, and a pinch of salt.
- Add the chicken pieces and brown slightly on all sides.
- Blend the tomatoes into a purée and stir into the pot along with the tomato paste.
- Chop the chili and add it with cumin, then pour in half a liter of hot water and cover.
- Simmer for about an hour.
- Remove the chicken and let it rest, optionally grill for crispy skin.
- Add the rinsed rice with curry powder to the pot and mix.
- Pour water over the rice until just covered, bring to a boil for 10 minutes.
- Reduce heat and cook for another 10 minutes until water is absorbed.
- Serve the rice topped with chicken and garnish with raisins and lemon slices.
Notes
For serving, add a side salad or pita bread. Garnish with toasted nuts for extra crunch.
