Chicken Empanadas

Description

Delicious chicken empanadas filled with tender shredded chicken and melted cheese, wrapped in golden, flaky dough.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cheese, shredded (cheddar or mozzarella)
  • 1/2 cup onion, finely chopped
  • 1 clove garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Empanada dough (store-bought or homemade)
  • 1 egg (for egg wash, optional)

Instructions

  1. Preheat the oven to 400°F (200°C) or prepare your air fryer.
  2. Combine the shredded chicken, cheese, onion, garlic, cumin, paprika, salt, and pepper in a mixing bowl. Mix well until all ingredients are evenly distributed.
  3. Roll out the empanada dough on a floured surface and cut it into circles using a cookie cutter or a bowl.
  4. Place a spoonful of the chicken mixture in the center of each dough circle.
  5. Fold the dough over to create a half-moon shape and seal the edges by pressing them together. You can use a fork to make a decorative seal if you like.
  6. Brush the tops with egg wash for a beautiful golden finish.
  7. Bake for about 20-25 minutes or until they turn a delightful golden brown. If using an air fryer, cook at 350°F (175°C) for about 12-15 minutes.
  8. Serve warm and dig in!

Notes

Don’t overstuff the empanadas and seal tightly to prevent leaking. Experiment with spices for a twist!
