Ingredients

- 12 ounces (4 cups) bow tie pasta, dry
- 2 cups cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1 cup bocconcini cheese, halved
- 1 cup spinach, packed, finely chopped
- 1/2 cup basil, finely chopped
- 3 tablespoons pesto
- 2 tablespoons olive oil
- 1/2 lemon, juiced
- Salt
- Black pepper
Instructions
- Cook the bow tie pasta according to the package instructions. Once it’s al dente, drain the pasta and let it cool completely.
- Combine the cooled pasta with the cherry tomatoes, diced red onion, bocconcini cheese, chopped spinach, and basil in a large bowl. Give it a good mix!
- Whisk together the pesto, olive oil, lemon juice, salt, and black pepper in a smaller bowl until well combined.
- Pour the dressing over the pasta mixture and toss everything until it’s evenly coated with that delicious sauce.
- Serve your pasta salad chilled or at room temperature.
