- 3/4 cup frozen blueberries
- 2 cups creamy non-dairy milk
- 1 tablespoon grade A maple syrup
- 1 teaspoon vanilla extract
- Juice of 1/2 small lemon
- 1/4 teaspoon kosher salt
- 2 cups rolled oats
- 2 tablespoons chia seeds
- Optional add-ins: 1/4 teaspoon cinnamon and/or cardamom
- Topping suggestions: extra blueberries, pumpkin seeds, hemp hearts, nut butter
Instructions
- Make the Blueberry “Milk”: Add frozen blueberries to a high-speed blender, then pour in the non-dairy milk, maple syrup, vanilla extract, lemon juice, and salt. Blend until smooth.
- Mix: In a large bowl, combine rolled oats and chia seeds. Pour in the blueberry milk and stir until combined. Let sit for at least 5 minutes.
- Store: Transfer the oats to containers and refrigerate for at least 4 hours or overnight. Top with blueberries and enjoy!
