Ingredients

- 1 lb ground beef
- 1 small onion, chopped
- 1/2 bell pepper, chopped
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp chili powder
- 1 pack puff pastry sheets, thawed
- 1 egg, beaten
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F.
- Sauté the aromatics: In a large skillet, heat olive oil over medium heat. Add onion, garlic, and bell pepper. Sauté until soft, about 5 minutes.
- Brown the beef: Add ground beef to the skillet. Cook until browned, breaking it into pieces, about 7-10 minutes.
- Add flavor: Stir in tomato paste, cumin, paprika, and chili powder. Season with salt and pepper. Cook for an additional 2-3 minutes, then remove from heat.
- Prepare your pastry: Roll out the thawed puff pastry. Use a round cutter to cut circles, about 4-5 inches in diameter.
- Fill and seal: Place a tablespoon of mixture in the center of each circle. Fold over, press edges, and seal with a fork.
- Brush the tops with beaten egg.
- Bake: Place on a lined baking sheet and bake for 20-25 minutes or until golden brown.
Notes
These empanadas can be served with a side salad or dipping sauce. They can be stored in the fridge for up to three days or frozen before baking for up to three months.
