Description
A vibrant dish featuring tender chicken, a creamy and spicy sauce, and colorful vegetables, perfect for any family gathering or busy weeknight.
Ingredients
Scale
- 1 lb chicken breast, diced
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust to taste)
- 2 cups cooked rice
- 1 cup mixed vegetables (such as bell peppers, broccoli, and carrots)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Mix the mayonnaise, sweet chili sauce, and sriracha in a bowl to create the flavorful Bang Bang sauce. You can adjust the spiciness based on your preference!
- Heat olive oil in a pan over medium heat. While the oil gets warm, season the diced chicken pieces with salt and pepper. Cook them in the pan until they turn golden brown and cooked through, about 5-7 minutes.
- Transfer the chicken to the bowl with the sauce. Stir well until all the chicken pieces are evenly coated.
- Layer the cooked rice in serving bowls, then add the seasoned chicken on top, followed by a generous helping of mixed vegetables.
- Garnish your bowls with chopped green onions for that extra touch of flavor and freshness.
- Serve warm and enjoy!
Notes
Feel free to adjust the spice levels and use fresh vegetables for the best results. Leftovers can be stored in the fridge for 3-4 days.
