  • 2 large eggs
  • 1/2 cup buttermilk

  • 1/4 teaspoon salt
  • 1 ripe banana, mashed
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract (for frosting)
  • Sliced bananas for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Cream together the butter and sugar until light and fluffy, about 3-4 minutes.
  3. Add in the eggs one at a time, beating well after each addition.
  4. Mix in the mashed banana and vanilla extract until combined.
  5. Whisk together the flour, baking powder, baking soda, and salt in another bowl.
  6. Gradually add the dry ingredients to the banana mixture, alternating with the buttermilk.
  7. Fill the cupcake liners about 2/3 full with the batter.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cupcakes cool completely in the pan for about 10 minutes, then transfer to a wire rack.
  10. Whip the heavy cream until soft peaks form, then add the powdered sugar and 1/2 teaspoon of vanilla extract until you reach stiff peaks.
  11. Frost the cooled cupcakes with whipped cream and top with sliced bananas.

Notes

Use overripe bananas for the best flavor and ensure all ingredients are at room temperature for a lighter batter.
