Description

A flavorful dish featuring marinated flank steak grilled to perfection, paired with tender zucchini and creamy whipped feta.


Ingredients

  • 1 flank steak
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 medium zucchinis, sliced
  • 1 cup feta cheese
  • 1/2 cup cream or Greek yogurt
  • 1 tablespoon honey
  • Lettuce for serving (optional)

Instructions

  1. Grab a bowl and combine the balsamic vinegar, olive oil, minced garlic, salt, and black pepper.
  2. Place the flank steak in a resealable bag or dish and pour the marinade over it, letting it soak for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Grill the flank steak for about 5-7 minutes on each side until it reaches desired doneness.
  5. Add the zucchini slices to the grill during the last few minutes of cooking.
  6. Combine the feta cheese, cream or yogurt, and honey in a blender and blend until smooth.
  7. Let the steak rest for a few minutes before slicing.
  8. Serve the sliced steak over the grilled zucchini and drape the whipped feta on top.

Notes

Marinate the steak longer for richer flavor. Keep an eye on the zucchini to avoid overcooking.
