Description
A delightful and customizable bento cake that’s perfect for sharing and celebrating any occasion.
Ingredients
Scale
- 1 cup all-purpose flour (or almond flour for gluten-free)
- 1/2 cup granulated sugar (or coconut sugar)
- 1/4 cup unsalted butter, softened (or plant-based butter)
- 1 large egg (or 1/4 cup applesauce)
- 1/3 cup milk (almond or oat milk)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and line a 4-inch round cake pan with parchment paper.
- Cream the softened butter and sugar together until light and fluffy, about three minutes. Add the egg and vanilla, mixing well.
- Whisk the flour, baking powder, and salt in a separate bowl. Gradually combine this with the wet mixture, alternating with the milk.
- Pour the batter into the prepared cake pan and bake for 22-25 minutes. Check for doneness with a toothpick.
- Cool the cake in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Level the top of the cake with a knife and slice it horizontally into 2-3 layers.
- Beat the softened butter for frosting until creamy. Gradually add powdered sugar and cream until smooth, adding vanilla.
- Layer the cake with frosting between each layer, apply a crumb coat, and chill for about 15 minutes.
- Frost the cake with a final layer and decorate with piping bags, sprinkles, or decorative treats.
Notes
Kids can help decorate the cake for a fun family activity. Serve with ice cream or berries for an elevated experience.
