Description

Ingredients

  • 1 cup orzo pasta
  • 1 lemon (juice and zest)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta in salted boiling water according to package instructions until al dente.
  2. Drain and rinse under cold water.
  3. In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, and parsley.
  4. In a separate bowl, whisk together the lemon juice, lemon zest, olive oil, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Serve chilled or at room temperature.

Notes

Garnish with extra chopped parsley or a sprinkle of lemon zest before serving. This salad can be made a day in advance for added flavor.
