Instructions
- Prepare the marinade: In a mixing bowl, whisk together the olive oil, minced garlic, tomato paste, honey, chili flakes, lemon juice, salt, and black pepper.
- Marinate the chicken: Add the diced chicken breasts to the bowl and toss until coated. Let it marinate for 10 minutes.
- Grill the chicken: Heat your grill or frying pan over medium-high heat. Add the chicken and cook for about 6-8 minutes until cooked through.
- Prepare the salad: Combine the cucumber, cherry tomatoes, remaining lemon juice, olive oil, and salt in a separate bowl.
- Assemble the bowls: Start with a base of hummus, top with grilled chicken and cucumber salad, then garnish with parsley and smoked paprika.
Notes
For additional flavor, marinate the chicken longer than 10 minutes if possible.
