Description

A refreshing and nutritious quinoa salad packed with veggies and a tangy dressing.


Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. Combine quinoa and vegetable broth in a pot. Bring to a boil.
  3. Reduce heat to low, cover, and simmer for about 15 minutes or until liquid is absorbed.
  4. Remove from heat and let it sit for 5 minutes. Fluff with a fork.
  5. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and parsley.
  6. Mix the olive oil and balsamic vinegar in a small bowl.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve chilled or at room temperature.

Notes

For added protein, consider adding chickpeas or grilled chicken.
