6 cups mixed greens (baby spinach, arugula, or spring mix)
2 ripe pears, thinly sliced
1/2 cup pomegranate seeds
1/3 cup crumbled feta or goat cheese
1/2 cup candied pecans or walnuts
1/4 red onion, thinly sliced
**For the Honey Balsamic Dressing:**
1/4 cup olive oil
2 tbsp balsamic vinegar
1 tbsp honey
1 tsp Dijon mustard
Salt and pepper, to taste
Instructions
1. In a large salad bowl, layer the greens, pears, pomegranate seeds, red onion, feta, and candied pecans.
2. In a small bowl or jar, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined.
3. Drizzle the dressing over the salad just before serving.
4. Toss gently to coat everything evenly.
5. Serve immediately for the freshest flavor and best texture.
Notes
You can add roasted butternut squash or apple slices for extra holiday flair.
For a vegan version, use maple syrup instead of honey and skip the cheese.
This salad pairs beautifully with roast chicken, turkey, or ham.
