Description
Hearty Wild Rice Soup with vegetables and tender chicken, perfect for warming up any day.
Ingredients
1 cup wild rice, rinsed
1 tbsp olive oil
1 onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
6 cups chicken or vegetable broth
2 cups cooked chicken (optional)
1 tsp dried thyme
1 tsp black pepper
Salt to taste
½ cup heavy cream (optional)
Instructions
1. Rinse and soak wild rice for 20–30 minutes.
2. Heat olive oil in a large pot; sauté onion, carrot, and celery.
3. Add garlic and cook 1 minute.
4. Stir in wild rice, broth, and thyme; bring to a boil.
5. Reduce heat and simmer 45–50 minutes.
6. Adjust seasoning; stir in chicken if using.
7. Add cream if desired; let rest 5–10 minutes before serving.
Notes
Chill overnight for deeper flavor.
Use vegetable broth for a vegetarian version.
