Description

For the Cake:

4 large eggs

1/2 cup granulated sugar

1 tsp vanilla extract

2/3 cup all-purpose flour

1 tsp baking powder

1/4 tsp salt

For the Filling:

1 cup heavy cream

1 cup white chocolate chips

1/2 cup raspberry jam

For the Ganache:

1 cup white chocolate chips

1/2 cup heavy cream

Fresh raspberries and powdered sugar for garnish


Instructions

1. Preheat oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper.

2. In a large bowl, beat eggs and sugar together until pale and thick; stir in vanilla.

3. Sift in flour, baking powder, and salt; gently fold until just combined.

4. Spread batter evenly into the prepared pan and bake for 10–12 minutes until springy to the touch.

5. While still warm, invert cake onto a clean towel dusted with powdered sugar; peel off parchment and roll the cake up with the towel. Cool completely.

6. For the filling, heat 1 cup cream until just simmering, pour over 1 cup white chocolate chips, and stir until smooth. Chill 30 minutes, then whip until fluffy.

7. Unroll cooled cake, spread raspberry jam evenly, then top with whipped white chocolate mousse. Re-roll gently.

8. For the ganache, heat 1/2 cup cream and pour over 1 cup white chocolate chips. Stir until smooth, let cool slightly, then spread over the rolled cake.

9. Decorate with fresh raspberries and a dusting of powdered sugar before serving.

Notes

Make ahead: Cake can be rolled and refrigerated for up to 24 hours before decorating.

Use seedless raspberry jam for a smoother texture.

For extra flavor, add a splash of almond extract to the cake batter.
