Ingredients
4 cups frozen corn kernels, thawed and drained
8 oz white cheddar cheese, freshly grated
½ cup heavy cream
¼ cup cream cheese, softened
2 tablespoons butter, melted
2 large eggs, beaten
1 tablespoon sugar
1 teaspoon salt
½ teaspoon black pepper
¼ teaspoon paprika
2 tablespoons fresh chives, chopped
Optional additions:
2–3 jalapeños, minced
1 teaspoon chipotle peppers in adobo
Fresh herbs (thyme, rosemary, sage)
Instructions
1. Preheat oven to 350°F (175°C) and butter a 2-quart baking dish thoroughly.
2. Thaw frozen corn completely and drain excess moisture by patting with paper towels.
3. In large mixing bowl, combine corn kernels with melted butter until evenly coated.
4. In separate bowl, whisk together heavy cream, cream cheese, beaten eggs, sugar, salt, pepper, and paprika until smooth.
5. Pour cream mixture over corn and fold gently to combine evenly.
6. Add three-quarters of the grated white cheddar cheese and mix until distributed.
7. Transfer mixture to prepared baking dish and smooth top evenly.
8. Sprinkle remaining cheese and fresh chives over surface.
9. Bake for 35-40 minutes until center is set and top is golden brown with bubbling edges.
10. Let rest for 10 minutes before serving to allow custard to set properly.
11. Serve warm as a side dish with your favorite main courses.

Room temperature eggs prevent curdling when mixed with cream.
