Description

Comforting chicken enchiladas packed with protein, perfect for family dinners and gatherings, easy to prepare and deliciously satisfying.


Ingredients

  • 2 cups shredded chicken
  • 8 corn tortillas
  • 1 cup white sauce (béchamel)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup diced onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the shredded chicken, diced onions, garlic powder, cumin, salt, and pepper in a mixing bowl and stir well.
  3. Spoon some of the chicken mixture into each corn tortilla and roll tightly.
  4. Place the rolled tortillas seam-side down in a baking dish.
  5. Pour the white sauce over the enchiladas and sprinkle shredded cheese on top.
  6. Bake for 20-25 minutes or until the cheese is bubbly and golden.
  7. Garnish with fresh cilantro before serving.
