- 1 lb boneless, skinless chicken breasts
- 2 cups diced potatoes
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp butter
- 1 cup frozen peas
- 1/4 cup fresh parsley, chopped
Instructions
- Start by melting 2 tablespoons of butter in a large pot over medium heat. Once it’s melted and bubbly, add the diced onions, carrots, and chopped celery. Sauté them for about 5–7 minutes until they soften and the onions turn translucent.
- Next, stir in the minced garlic and cook it for an additional minute. The aroma will be fabulous and make your mouth water!
- Add the boneless chicken breasts, diced potatoes, chicken broth, dried thyme, salt, and black pepper. Bring everything to a gentle boil, then reduce the heat to low and let it simmer for 20–25 minutes. During this time, the chicken will cook, and the potatoes will become tender.
- Once the chicken is cooked through, remove it from the pot. Shred the chicken into bite-sized pieces and return it to the pot with the rest of the ingredients.
- Now, pour in the heavy cream and add the frozen peas, letting it simmer for another 5 minutes to meld all the flavors together.
- Finish it off by garnishing with freshly chopped parsley before serving.
Notes
Pair with warm biscuits or crusty bread for a perfect meal. Leftovers store well in the fridge for 3-4 days or can be frozen for up to 2-3 months.
