1 1/4 cups all-purpose flour

1/4 cup almond flour

1/3 cup powdered sugar

1/2 cup unsalted butter, cold and cubed

1 egg yolk

12 tsp cold water, as needed

**Lavender-Vanilla Filling:**

1 cup whole milk

1 cup heavy cream

1 tbsp dried culinary lavender

1/2 cup sugar

3 egg yolks

2 tbsp cornstarch

1 tsp vanilla extract

1 drop violet or purple gel food coloring (optional)

**Violet Glaze:**

1/4 cup blueberry or violet jam

1 tbsp water

1/2 tsp edible luster dust (violet or pearl)

**Toppings:**

Edible flowers, whipped cream, or silver leaf (optional)


Instructions

1. In a food processor, pulse flour, almond flour, powdered sugar, and butter until crumbly.

2. Add egg yolk and water, pulsing just until the dough comes together.

3. Form into a disc, wrap, and chill for 30 minutes.

4. Preheat oven to 350°F (175°C). Roll dough into a 9-inch tart pan, prick the bottom with a fork, and line with parchment and weights.

5. Bake for 15 minutes, remove weights, and bake 10 minutes more until golden. Cool completely.

6. In a saucepan, heat milk, cream, and lavender over medium heat until steaming (do not boil). Remove from heat and let steep for 10 minutes. Strain.

7. Whisk egg yolks, sugar, and cornstarch in a bowl until pale. Gradually whisk in warm lavender milk.

8. Return mixture to saucepan and cook over medium heat, stirring constantly, until thickened. Remove from heat, stir in vanilla and optional coloring.

9. Pour filling into tart shell, smooth top, and chill until set (at least 2 hours).

10. Warm jam and water in a small pan to make glaze. Stir in luster dust and brush gently over the tart.

11. Decorate with edible flowers or whipped cream before serving.
