Delightful Vietnamese spring rolls filled with fresh ingredients and served with a creamy peanut hoisin sauce.
Ingredients
- Rice paper wrappers
- Cooked shrimp
- Rice noodles
- Fresh mint leaves
- Crunchy lettuce
- Peanut hoisin sauce for dipping
Instructions
- Prepare the rice noodles according to the package instructions. Once they’re done, set them aside to cool.
- Fill a shallow dish with warm water. Dip a rice paper wrapper into the water for about 10 seconds until it softens.
- Lay the wrapper flat on a clean surface, making sure it doesn’t stick.
- Place a few shrimp, a small amount of rice noodles, a few mint leaves, and lettuce on the bottom third of the wrapper.
- Fold the sides of the wrapper over the filling, then roll it tightly from the bottom to the top.
- Repeat with the remaining ingredients until you’ve made a delightful platter of spring rolls.
- Serve with peanut hoisin sauce for dipping and enjoy!
Notes
For best results, chill all ingredients before wrapping and try to roll the spring rolls tightly to prevent fillings from spilling out.
