Description
This Veggie Bake combines cottage cheese, vegetables, and herbs for a creamy, comforting dish perfect as a main or side.
Ingredients
2 cups cottage cheese
2 large eggs
1 cup shredded mozzarella
2 zucchini, sliced
1 red bell pepper, chopped
2 cups fresh spinach
1 cup broccoli florets
2 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
Salt and pepper to taste
Instructions
1. Preheat oven to 375°F (190°C). Grease a baking dish.
2. Layer zucchini, peppers, spinach, and broccoli.
3. Whisk cottage cheese, eggs, mozzarella, and seasonings.
4. Pour mixture over vegetables.
5. Top with extra cheese.
6. Bake for 35–40 minutes until golden and bubbling.
7. Cool 5–10 minutes before serving.
Notes
Swap spinach with kale or add chickpeas for protein.
For spice, add chili flakes before baking.
