  • Cilantro (chopped for garnish)
  • Vegan yogurt (for creaminess)
  • Vegan mayonnaise (for extra flavor)
  • Chipotle seasoning (to bring some heat)
  • Lime (for zest)
  • Corn tortillas (for serving)
  • Salt (to taste)

Instructions

  1. Start by preparing the tofu; crumble and sauté it with chipotle seasoning until golden.
  2. In a large bowl, combine the greens, corn, black beans, chopped cherry tomatoes, diced avocado, and finely chopped red onion.
  3. Add the cooked tofu to the salad mixture.
  4. Drizzle with vegan yogurt, vegan mayonnaise, and lime juice, then sprinkle with salt to taste. Add cilantro as desired.
  5. Serve the salad with crispy corn tortillas on the side.

Notes
