Ultimate Easy Summer Pasta Salad is a fresh, vibrant, and customizable side or main perfect for warm weather meals and potlucks.
Ingredients
8 oz rotini pasta
1 cup cherry tomatoes, halved
½ cucumber, diced
1 bell pepper, chopped
½ cup black olives, sliced
¼ cup red onion, chopped
¾ cup feta cheese
Optional: 1 cup grilled chicken or chickpeas
Dressing:
¼ cup olive oil
2 tbsp lemon juice or vinegar
1 tsp Dijon mustard
Salt, pepper, Italian seasoning
Instructions
1. Cook pasta according to package; rinse under cold water.
2. Chop all veggies and protein (if using).
3. Mix pasta, vegetables, and cheese in a large bowl.
4. In a jar, shake dressing ingredients until emulsified.
5. Toss salad with dressing until well coated.
6. Chill for 30+ minutes before serving.
Notes
Add more lemon juice or herbs for brightness.
Use gluten-free pasta if needed.
Best served chilled; remix before serving if storing.
