- 2 Chicken breasts
- 1/2 cup Sun-dried tomatoes
- 2 cups Fresh spinach
- 1/4 cup Basil
- 2 tablespoons Olive oil
- 3 cloves Garlic
- 1 cup Heavy cream
- 1/2 cup Parmesan cheese
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
Instructions
- Heat olive oil in a skillet over medium heat.
- Season the chicken breasts generously with salt and pepper.
- Add them to the skillet, cooking until browned and fully cooked through.
- Remove the chicken from the skillet and set it aside.
- Add minced garlic to the same skillet and cook until fragrant.
- Stir in the sun-dried tomatoes and cook for a couple of minutes.
- Add the fresh spinach and basil, stirring until the spinach wilts.
- Pour in the heavy cream and bring to a gentle simmer.
- Stir in the parmesan cheese until it melts into the sauce.
- Return the cooked chicken to the skillet, coating in the sauce.
- Serve immediately and enjoy!
