Description

A comforting Tuscan-inspired dish featuring juicy chicken, creamy orzo, fresh spinach, and tangy sun-dried tomatoes.


Ingredients

  • 2 chicken breasts
  • 1 cup orzo pasta
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 cup fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pan over medium heat. Season chicken breasts with salt and pepper and cook until browned on both sides. Remove and set aside.
  2. Add minced garlic to the pan and cook until fragrant. Toss in the orzo and toast for 1-2 minutes.
  3. Pour in chicken broth and bring to a boil. Reduce heat and simmer for about 10 minutes until orzo is cooked.
  4. Stir in heavy cream, parmesan, spinach, and sun-dried tomatoes.
  5. Return chicken to the pan, cover, and cook for an additional 5 minutes until chicken is cooked through and spinach wilts.
  6. Serve warm and enjoy!

Notes

To elevate the dish, serve with fresh parsley or additional parmesan. Store leftovers in the refrigerator for up to 3 days, or freeze for up to 2 months.
