Ingredients

- 2 chicken breasts
- 1 cup orzo pasta
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 cup fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pan over medium heat. Season chicken breasts with salt and pepper and cook until browned on both sides. Remove and set aside.
- Add minced garlic to the pan and cook until fragrant. Toss in the orzo and toast for 1-2 minutes.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for about 10 minutes until orzo is cooked.
- Stir in heavy cream, parmesan, spinach, and sun-dried tomatoes.
- Return chicken to the pan, cover, and cook for an additional 5 minutes until chicken is cooked through and spinach wilts.
- Serve warm and enjoy!
Notes
To elevate the dish, serve with fresh parsley or additional parmesan. Store leftovers in the refrigerator for up to 3 days, or freeze for up to 2 months.
