Ingredients
For the Cake:
4 large eggs
3/4 cup granulated sugar
1 tsp vanilla extract
1/4 cup vegetable oil
1/2 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1 tsp baking powder
1/4 tsp salt
For the Filling:
8 oz cream cheese, softened
1/4 cup butter, softened
1/2 cup caramel sauce
1 1/2 cups powdered sugar
1/2 cup chopped pecans
For the Ganache:
1 cup semi-sweet chocolate chips
1/2 cup heavy cream
For Topping:
1/4 cup caramel sauce (for drizzle)
1/4 cup chopped pecans
Instructions
1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
2. In a large bowl, beat eggs, sugar, and vanilla until thick and pale. Mix in oil.
3. Sift together flour, cocoa, baking powder, and salt, then fold into wet mixture until just combined.
4. Spread evenly into prepared pan and bake for 10–12 minutes, or until springy to the touch.
5. Invert warm cake onto a clean towel dusted with cocoa powder, peel off parchment, and roll up with the towel. Let cool completely.
6. For the filling, beat cream cheese and butter until smooth, then add caramel sauce and powdered sugar until fluffy. Fold in chopped pecans.
7. Unroll cooled cake and spread filling evenly. Re-roll gently and refrigerate for 30 minutes.
8. For the ganache, heat cream until just simmering, pour over chocolate chips, let sit 2 minutes, then stir until smooth.
9. Spread ganache over chilled cake roll. Drizzle with caramel sauce and sprinkle with chopped pecans.
10. Refrigerate until set, slice, and serve chilled or at room temperature.
Notes
For a salted caramel version, use salted caramel sauce and sprinkle sea salt flakes on top.
Cake can be made a day ahead and stored in the refrigerator.
For cleaner slices, warm your knife between cuts.
