Ingredients
— Turkey Meatballs —
1 lb ground turkey
1/3 cup breadcrumbs
1 egg
2 garlic cloves, minced
1/2 tsp onion powder
1/2 tsp dried sage
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil (for browning)
— Creamy Pumpkin Sage Sauce —
1 tbsp butter
2 garlic cloves, minced
1/2 cup pumpkin puree
1 cup chicken broth
1/2 cup heavy cream
1/4 cup grated parmesan
1/2 tsp dried sage (or 1 tsp fresh, finely chopped)
1/4 tsp paprika
Salt and pepper, to taste
Fresh sage or parsley for garnish
Instructions
1. Combine ground turkey, breadcrumbs, egg, garlic, sage, salt, and pepper in a bowl.
2. Form into 14–16 small meatballs.
3. Heat olive oil in a skillet and brown meatballs on all sides (they do not need to be fully cooked).
4. Remove meatballs and set aside.
5. In the same skillet, melt butter and sauté garlic for 30 seconds.
6. Add pumpkin puree and stir.
7. Pour in chicken broth and heavy cream, whisking until smooth.
8. Stir in parmesan, sage, and paprika.
9. Return meatballs to the skillet and simmer 10–12 minutes, or until cooked through and sauce thickens.
10. Season to taste and garnish with fresh herbs before serving.
Notes
Serve over pasta, mashed potatoes, rice, or polenta.
For extra flavor, add a splash of white wine while sautéing garlic.
Swap turkey for chicken or pork if preferred.
Use coconut milk instead of cream for a dairy-free version (omit parmesan).
