Ingredients

1 cup chopped pistachios

1 tsp baking powder

1/2 tsp baking soda

3 large eggs

1/2 cup sour cream or Greek yogurt

1/2 cup butter, softened

1/2 cup shredded coconut

1/2 cup crushed pineapple (drained)

Zest of 1 lime

1 tsp vanilla extract

Pinch of salt


Instructions

1. Preheat oven to 350°F (175°C).

2. Grease and line a 9-inch cake pan.

3. Cream butter and sugar until fluffy.

4. Add eggs one at a time.

5. Mix in sour cream, vanilla, and lime zest.

6. Combine dry ingredients separately.

7. Fold dry mixture into wet mixture.

8. Stir in pistachios, coconut, and pineapple.

9. Pour batter into pan.

10. Bake 35–40 minutes until golden.

11. Cool 15 minutes before slicing.

Notes

You can substitute mango for pineapple.

Almonds or cashews can replace pistachios.
