Instructions
- Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans.
- Whisk together the flour, baking powder, and salt. Set aside.
- Beat the butter and sugar together until light and fluffy, about 3–4 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Add the dry ingredients in three batches, alternating with buttermilk, mixing until just combined.
- Divide the batter evenly between the prepared pans and bake for 25–30 minutes.
- Cool the cakes in the pans for about 10 minutes, then turn them out onto wire racks to cool completely.
- Beat the cream cheese with powdered sugar, lemon zest, and lemon juice until smooth. Whip heavy cream and fold it into the lemon mixture.
- Whip together heavy cream, powdered sugar, and vanilla extract for the topping.
- Slice the cakes in half horizontally, spread lemon cream filling between each layer, and top with whipped cream frosting.
- Refrigerate the cake for at least an hour before serving.
