Ingredients
1 tbsp coconut oil or olive oil
1 small onion, diced
2 garlic cloves, minced
1 tbsp fresh ginger, grated
1 tbsp fresh turmeric, grated (or 1 tsp ground turmeric)
2 carrots, peeled and sliced
1 small sweet potato, diced
1 cup cauliflower florets
4 cups vegetable broth
1/2 tsp ground cumin
1/4 tsp black pepper
1/2 cup coconut milk
Juice of 1/2 lemon
Salt to taste
Fresh cilantro or parsley for garnish
Instructions
1. In a large pot, heat coconut oil over medium heat.
2. Add onion, garlic, ginger, and turmeric; sauté for 2–3 minutes until fragrant.
3. Stir in carrots, sweet potato, cauliflower, cumin, and black pepper.
4. Pour in vegetable broth and bring to a boil.
5. Reduce heat and simmer for 20–25 minutes until vegetables are tender.
6. Remove from heat and stir in coconut milk and lemon juice.
7. Blend the soup using an immersion blender until smooth and creamy.
8. Adjust seasoning with salt to taste.
9. Serve warm, garnished with fresh herbs and a drizzle of coconut milk.
